Tempura is a classic Japanese dish of deep fried lightly-battered vegetables or seafood. Donburi lit. "bowl", also frequently abbreviated as "don", thus less commonly spelled "domburi") is a Japanese "rice bowl dish" consisting of fish, meat, vegetables or other ingredients simmered together and served over rice. Donburi meals are served in oversized rice bowls also called donburi. Donburi are sometimes called sweetened or savory stews on rice. Together makes Tendon!

ingredients:
4 bowls of cooked rice
8 shrimps (2 1/2-3 ounces/80g each)
1/2 cup egg and cold water mixture (1/2 egg)
1/2 cup (60g) flour
vegetable oil for deep-frying
Ten-tsuyu (sauce)
2/3 cup (160 ml) dashi
1 1/2 tablespoons sugar
3 tablespoons soy sauce
3 tablespoons mirin
Cooking Step by Step
1. Cook rice.
2. Remove black vein of shrimp inserting toothpick between shell segments. Peel shrimp, leaving tail and the first section of shell attached to tail. Make 3-4 short cuts across the belly to prevent curling while being fried. Trim tip of tail and squeeze out water to prevent popping during frying.
3. To make ten-tsuyu: mix dashi, sugar, soy sauce and mirin in saucepan and bring to a boil; then simmer 2-3 minutes.
4. Mix egg and cold water in mixing bowl. Add flour and mix lighly. The knack is to mix lightly so as not to get flour sticky.
5. Heat vegetable oil to 340°F (170°C). Dip shrimp in batter and fry.
6. Place cooked rice in a serving bowl. Dip the fried shrimp in the ten tsuyu and place on top of rice. Ladle 2 tablespoons of ten-tsuyu over the topping.
