It is a "Western sushi", a variations of sushi typically found in the West but rarely if at all in Japan, to suit the Western palate. Ebi tempura roll (can be Futomaki or Uramaki ) consist of a tempura-fried shrimp, or prawn, topped with sweet eel sauce; there are also some variations, with the tempura shrimp wrapped in lettuce or topped also with mayonnaise. In uramaki style the rice is covered with tobiko. I've see also some Nigirizushi style on the net, but never eat it.
